    8 g  fresh yeast
    500 ml  water
Mix and rest overnight at room temp Focaccia dough:
    5#  bread flour
    1800 ml  water
    1.5 oz  fresh yeast
    2 oz  salt
    6.5 oz  olive oil
Mix on 1 for 2 min Mix on 2 for 10 min Rest 1 hour Fold, rest 45 min Fold, rest 30 min Portion, shape, season, rest 20 min
      Dock, rest 5 min

Bake high fan, 500 deg. For 5 min
Rotate bake 5 min and cool
