Roast Duckling

    4-5 lb  drained duck
    1 small  orange, quartered
    Juice of 1/2  lemon
    1/2 tsp  salt
    1/2 cup  ginger ale
    1/2 cup  sherry

Wipe duckling inside and out with a damp cloth
Fill cavity with orange quarters
Roast, breast side up, uncovered for 45 minutes at 375 degrees
Drain off all fat
Sprinkle with lemon juice and salt
Add ginger ale and sherry
Cover pan and reduce het to 325 degrees
Continue roasting 1 1/2 hours or until drumstick separates easily from the thigh bone.
Baste several times during roasting
