Jambalaya (Dutch Oven)

1/4 lb | bacon |
1/4 cup | bacon drippings, (the above should make almost exactly this amount) |
1/2 lb | smoked sausage, diced into 1/2 inch pieces |
1/2 lb | andouille, diced into 1/2 inch pieces |
1 cup | chicken, cut into 1 inch pieces |
1 large | onion, coarse lay chopped |
1 medium | green bell pepper, coarsely chopped |
3 stalks | celery, coarsely chopped |
3 cloves | garlic, finely minced |
1 1/2 cup | long grained rice, (Uncle Ben's converted works) |
1 can (8oz) | Rotel tomatoes, (diced) |
1 cup | beef stock |
1 tsp | Kitchen Bouquet |
1/4 tsp | dried thyme leaves |
1 tsp | chili powder |
1/4 tsp | black pepper |
1/8 tsp | cayenne pepper |
1/2 tsp | salt |
1 lb | peeled, deveined shrimp (26/30) |
6 | green onion, sliced |
1/4 cup | fresh parsley, minced |
NOTE: you need a well-seasoned black cast-iron Dutch oven (8 quart) with a tight fitting lid.
Preheat oven to 300.
Fry the bacon in the Dutch oven over medium high heat until crispy but not burned.
Remove bacon and dry on paper towel.
Fry sausage for about minutes ... Add the chicken and crumbled bacon ... Stir fry until chicken turns white ...
Immediately add the onions, bell pepper, celery and garlic ... Reduce heat to medium and cook until the veggies soften.
Pour in the rice and stir thoroughly until every single grain of rice is moistened - about 5 minutes.
Add the tomatoes, beef stock, Kitchen Bouquet, thyme and chili powder ... Blend everything together well and bring mixture to a slow boil ... Season with black pepper, cayenne pepper and salt.
Put a piece of tin foil over the top of the pot unless the lid is heavy and tight fitting. Put the lid on top of the tin foil and put in the oven.
Cook for 45 minutes ( no peeking )
Add the shrimp, green onions, parsley and mix well.
Return to oven for about 5 minutes.
