Banana and Cinnamon Muffins

460g | Cake Flour |
10ml | Baking Soda |
10ml | Baking powder |
10ml | Ground Cinnamon |
50ml | Salt |
300g | Granulated Sugar |
2 | Eggs |
160g | Butter. melted |
120ml | Milk |
6 | Ripe Bananas, Mashed |
100ml | Pecan Nuts, roughly chopped |
Crumble | |
50g | Butter |
100g | Cake Flour |
100g | Granulated sugar |
1x | 12 Muffin tin |
Oven 330F
Mix Dry ingredients.
Combine Sugar, Eggs, Butter, Milk, Bananas and nuts
Add wet to dry and mix well.
Spoon into tins
Crumble:-rub ingredients together and then sprinle generously on top of muffins. Bake for about 15-20. Muffins should be JUST done and not any minute longer to ensure moist, fluffy deliceousness!
When Cool garnish with bananas that have been caramelized in Syrup( slice bananas, splach with rum and sprinkle generously with brown sugar. Torch with a blow torche or place under a grill until golden caramel. Cool and use as garnish)
