Bacon Wrapped Pork Tenderloin with BBQ Pulled pork and BAcon Pineapple Salsa

1 | pork tenderloin |
8 strips | back bacon |
3 tsp | grainy mustard |
1 | bbq pulled pork |
1 | pineapple bacon salsa |
Season Pork tenderloin with salt and pepper. Smear with grainy mustard. Lay strip of bacon overlapping on a piece of plastic wrap. place tenderloin at one and and tightly wrap.Close ends like a sausage to form a tight round end. refridgerate overnight.
Sear tenderloin and roast in overn (350) till medium(about 15-20 minutes). Remove from oven and allow to rest for 5 minutes. Slice 3 1inch pieces off. Lay on their side on a place and top with some warm pulled pork.
Add a spoonfull of salsa to plate serve
