Portuguese Sweet Bread

Sponge | |
1 pkg | dry yeast |
3/4 cup | warm water |
3 | eggs |
5 Tbs | flour |
3 Tbs | sugar |
Dough | |
3 1/2 cups | sugar |
5 sticks | butter |
2 cups | milk |
2 cups | salt |
2 dozen eggs | |
2 Tbs | shortening |
5 lbs | bread flour |
2 tsp | cinnamon |
2 eggs for egg wash
1. To make the sponge you will need to disolve the yeast in the water until it begins to foam.
2. Slowly add the eggs and sugar then the flour. This should all be done 2 days ahead of baking.
3. Day 2 - combine the wet ingredients and then the dry ingredients separately.
4. Add the wet ingredients to the sponge from the day before.
5. Add the dry ingredients and let rise overnight.
6. In the morning, punch down dough. Then form to rounds.
7. Brush with egg wash.
Bake at 350 for 20 min then lower temperature to 325 and bake for another 25 - 30 min.
