3 to 4 lbs | veal shanks,, (4-6 shanks) |
1/3 cup | flour |
1 tsp | salt |
1/4 tsp | pepper |
2 Tbsp | olive oil |
1 tsp | dried basal leaves |
1 tsp | dried thyme leaves |
1 | bay leaf |
1/4 tsp | marjoram |
1/4 tsp | oregano |
1/8 tsp | sage |
1 cup | chopped onions |
1 cup | chopped carrots |
1 cup | chopped celery |
2 cloves | garlic |
2 lbs can | chopped tomatoes |
1 cup | white wine |
1 cup | red wine |
3 Tbsp | chopped parsley |
Wipe the veal shanks with a damp paper towel ... Set aside.
Combine flour, salt & pepper.
Coat veal shanks with flour mixture ... Shake off excess flour.
Heat oil & garlic in heavy pot ... Sauté veal shanks, turning until all sides are browned.
Remove veal shanks from pot ... Set aside.
Add other ingredients in crockpot, then add shanks
Cover and cook on High for 5 to 6 hours (or on Low for 10 - 12 hours)
Add parsley; transfer to serving dish & serve hot with pasta or rice
