    2 c.  sugar
    1 1/2 c.  chopped pecans
    3/4 c.  buttermilk
    2 Tb.  butter
    1/4 tsp.  salt
    1/2 tsp.  baking soda
    1 tsp.  vanilla extract
This recipe was tested in a 700-watt microwave.)

In a 4-qt. microwave-safe bowl, combine sugar, pecans, buttermilk, butter, and salt. Cook, uncovered, on high power (100%) 12 minutes, stirring every 4 minutes with a wooden spoon. Stir in baking soda (mixture will form). Cook on high power (100%) 1 minute longer or until mixture is a caramel color (watch closely to prevent mixture from boiling over bowl). Add vanilla; beat with a wooden spoon about 3 minutes or until mixture begins to thicken. Quickly drop by teaspoonfuls onto greased foil to form about 2" diamter pralines. Cool completely. Store in an airtight container.
