Fiesta Meatloaf

| 2 lbs | ground beef |
| 1 package | stove top chicken mix |
| 1 cup | water |
| 2 | eggs, beaten |
| 2 tsp | chili powder |
| 1/2 cup | thick and chunky salsa |
| 3/4 cup | finely shredded cheddar jack cheese |
1. Heat oven to 375.
2. Mix all ingredients but 1/4 cup salsa and cheese.
3. Shape into an oval-shaped loaf in a 9x13" baking dish. Top with remaining salsa.
4. Bake one hour until done. Top with cheese and bake 5 minutes or until melted.
