Easy Cheesy Chicken Chili

2 tbsp | olive oil |
2 tbsp | chopped fresh cilantro |
1 tbsp | chili powder |
1 tbsp | ground cumin |
2 tbsp | kosher salt |
1 clove | garlic, chopped |
1/2 tsp | freshly ground black pepper |
1/8 tsp | cayenne pepper |
4 | boneless, skinless chicken breasts |
1/4 cup | julienned green bell peppers |
2 tbsp | diced red onion |
1 medium | plum tomato, cored and diced |
4oz | shredded Colby jack cheese |
1. Preheat oven to 400.
2. Whisk together oil, cilantro, chili powder, cumin, salt, garlic, pepper and cayenne.
3. Add chicken and toss to coat.
4. Transfer chicken to a foil lined baking sheet and arrange pepper, onion and tomato over each. Roast about 20 minutes.
5. Remove from oven and top with cheese.
