5 | egg yolks |
1 c | sugar |
4 | lemons, zested & juiced |
1 stick | margarine, sliced in pats |
Directions: 1. Put water into pan (enough to come up 1" in pan); med heat to simmer 2. Meanwhile, combine yolks & sugar in metal bowl; whisk til smooth (about 1 min) 3. Add water to juice to make 1/3 c; add juice & zest to mixture; whisk til smooth 4. When water simmers, set bowl over water without touching; whisk til thickened (about 8 min) or until mixture is light yellow & coats back of spoon 5. Remove from heat & stir in marg | |

6. Put in container; put plastic wrap
on mixture (touching so it doesn't
form a skim)
7. Use in tarts, on breads or cakes,
as pudding, or as a dip (keeps
2 weeks)
