Caramel Corn

4 qt | popcorn, popped |
1/2 c | butter, or margarine |
1 c | brown sugar, firmly packed |
1/4 c | corn syrup |
1/2 tsp | salt |
1/2 tsp | baking soda |
1 tsp | vanilla |
Spray a brown paper bag with Pam and dump in popped corn. Combine brown sugar, butter, corn syrup, and salt. Microwave on HIGH 1 - 2 minutes or until bubbly. Stir. Boil 3 minutes, stirring after each minute. Add soda and vanilla. Stir well as it will foam up. Pour over popped corn in bag, fold down and shake. Microwave folded bag on HIGH 1 minute. Shake bag. Microwave 30 seconds. Shake bag. Microwave another 30 seconds and shake bag again. Pour onto cookie sheets to cool.
