Shrimp Scampi by Beeps

| 1 pound | shrimp, butterflied |
| 4 tablespoons | olive oil |
| 2 teaspoons | garlic, minced |
| 2 tablespoon | fresh lemon juice |
| 1 can | diced tomatoes |
| 2 tablespoons | parsley |
| ½ teaspoon | dried oregano |
| ½ teaspoon | pepper |
| ½ teaspoon | salt |
| ½ teaspoon | McCormicks grill mates roasted garlic & herb |
| 1 8 oz can | tomato paste |
Cook shrimp in olive oil on high heat while adding all the ingredients then turn shrimp before adding the diced tomatoes and the tomato paste. once everything is all together cook on high for a minute turning heat down to low a simmer for 5 minute. Put rice down on plate and top with shrimp scampi. Add any green for a side.
