Put slab, bone side down, on counter |
Slice between bone and membrane, then using a dry paper towel, pull membrane away
Put on rub and allow to sit over night
Smoke bone side up for 2:15 at 250
Remove and put in tinfoil bone side down with 1/3 cup apple juice and 1/3 cup pineapple juice
Smoke another hour
Remove tinfoil, place bone side up and smoke another 30 minutes.
Glaze and smoke another 10 minutes, til glaze crystalizes
