Banana Bread

3 or 4 | ripe bananas, smashed |
1/3 C | melted butter |
1 C | sugar,, (can be reduced to 3/4 C) |
1 | egg, beaten |
1 tsp | vanilla |
1 tsp | baking soda |
Pinch | salt |
1 1/2 C | all-purpose flour |
Preheat oven to 350*F
With a wooden spoon, mix butter into mashed bananas in a large bowl.
Mix in sugar, egg and vanilla.
Sprinkle the baking soda and salt over the mixture and stir in.
Add flour, and mix.
Pour mixture into a buttered 4x8in loaf pan.
Bake 1 hour.
Cool on rack.
**To bake as muffins**
Fill 12-15 muffin cups with batter.
Bake 25 minutes.
