Loveless Cafe Fried Chicken

4 tsp. | salt |
1 qt. | cold water |
1 (3 lbs. or less) | fryer chicken, cut into 8 pieces |
1 c. | self-rising flour |
1 Tb. | Loveless Seasoned Salt |
1/2 tsp. | ground black pepper |
1 1/4 tsp. | garlic powder |
Vegetable oil for frying | |
Loveless Seasoned Salt: | |
1 c. | kosher salt |
1/3 c. | garlic salt |
3 Tb. | celery salt |
2 Tb. | dry mustard |
1/2 Tb. | rubbed sage |
1 tsp. | dried rosemary |
1 1/2 Tb. | dried oregano |
1 tsp. | dried thyme |
Dissolve salt in cold water. Soak chicken in salt water for at least 30 minutes. Drain and pat dry. In a small bowl, combine flour, seasoned salt, pepper, and garlic powder; mix thoroughly. In a large skillet, heat 1" of oil over medium-high heat (375 degrees in an electric skillet). Dredge chicken in flour mixture, coating well on both sides. Place chicken in hot oil, making sure chicken pieces don't touch each other. When chicken is browned (approx. 5 minutes), turn pieces over and reduce heat to medium (300 degrees). Cover and cook for4 20 minutes. Remove the lid, bring heat back to medium-high and turn chicken, cooking for an additional 5-7 minutes. Drain on paper towels.
For Loveless Seasoned Salt: In a small bowl, blend all ingredients together. Store in an airtight container.
