Bacon and Lentil Soup

Ingredients: 2 teaspoons – Olive Oil 1 tin – lentils (or dried lentils, soaked overnight) 1 tin – crushed tomatoes 1 – Large Onion 2 – large carrots 1 Clove – Garlic 1.5 litre – Chicken or Vegetable Stock | |

Method:
Heat olive oil in pot.
Chop up carrots, onions and garlic.
Chop the bacon in to small chunks, removing the fat if you wish.
Fry the carrots, onion and garlic for 5 minutes.
Add the lentils, and tinned tomatoes.
Add the stock to the pot and start to simmer.
Simmer the soup for 15 to 20 minutes, stirring occasionally.
Blend with a hand blender.
In a seperate frying pan, heat some olive oil and fry the chunks of bacon.
Add to the blended post, and simmer for 5 minutes.
Season to taste.
Serve in a bowls.
