Asian Penne Salad

| 1 small | red onion |
| 1 | green pepper |
| 1 | red pepper |
| 3/4 c | snap peas |
| 3/4 C. | peanut oil |
| 2 t. | lemon juice |
| 2 T. | soy sauce |
| 2 t. | diced garlic |
| 1 t. | ginger |
| 3/4 C. | Parmesan cheese |
| 1/2 C. | cashews |
1/2 creamy Italian dressing
Marinade veggies in oil, lemon juice, soy sauce, garlic, and ginger. Combine marinated veggies with Parmesan cheese, noodles, cashews, and Italian dressing.
Serve chilled in bowls (optional, add diced chicken).
