Lemon Sorbet

3 c. | boiling water |
1 c. | sugar |
2 tsp. | grated lemon rind |
1/2 c. | lemon juice |
Combine boiling water and sugar in a large bowl, stirring until sugar dissolves; let cool. Add lemon rind and juice. Pour into a 9" square pan; freeze until frim. To serve, let stand at room temperature 10 minutes.
