Chex Lemon Buddies

| 9 cups | Rice Chex cereal |
| 1 1/4 cup | white vanilla baking chips |
| 1/4 cup | butter |
| margarine, alternative | |
| 4 tsp | grated lemon peel |
| 2 Tbsp | lemon juice |
| 2 cups | powdered sugar |
Measure cereal into a large mixing bowl and set aside. In a microwaveable bowl, microwave chips, butter, lemon peel and juice uncovered on high for 1 minute; stir. Microwave about 30 more seconds or until mixture can be stirred smooth. Pour mixture over cereal, stirring until evenly coated. Pour into a 2-gallon resealable food storage plastic bag. Add powdered sugar, seal bag and shake until all the cereal is well-coated.
This is all you need, seriously no lie!
It only takes 15 minutes to make...heaven for a momma!
Grate up your lemon first!! I only used about 1 teaspoon of grated lemon peel and it still tasted nice and lemon-y! I will freely admit that I am lazy when it comes to grating things. Even owning a micro-planer doesn't make it fun for me, ahh well. And just so ya know, next time I'll probably skip this step completely like I usually tend to do in recipes that call for lemon peel, orange peel, lime peel, you get the gist.
Then melt up your chips, butter, lemon peel and lemon juice.
Pour over your dry cereal and stir until well-coated...
Then add your cereal to a large ziploc bag with 2 cups of powdered sugar. Give it to your kids to shake while they sing Jingle Bells using all the wrong words...thank you husband!
I always put my Puppy Chow in the fridge so that is what I did with this too. I think it gives it the perfect chill. YUM!
