Bourbon barbecued pork chops

Prepare grill for indirect heat. For gas preheat to medium high on one burner and then others on medium low.
Whisk 1/4 cup salt, 1/4 cup brown sugar and 3 cups warm water in bowl. Add pork and soak at least 10 min. Mix 1/2 cup of bourbon or apple cider with 1/4 cup apple cider vinegar, 2 tsp Worcestershire, and remaining 1/4 cup brown sugar a clove or two of minced garlic and 1 tbsp of peeled ginger in an oven proof saucepan. Bring to a boil and remove. Grill 1 onion, 2 beefsteak tomatoes over direct heat, until charred, 3-5 min per side. Add to sauce pan and let sauce thicken over heat for 15 min. Remove chops from brine, brush w oil and cook on each side on grill 2-3 min per side. Put on cooler side of grill and cook 4 more min on each side, brushing with sauce. Add to veggies.
