In large bowl beat 1/2 CUP SHORTENING with electric mixer for 30-seconds. Add 1/2 CUP SUGAR, 1 TSP BAKING POWDER, 1 TSP GINGER, 1/2 TSP BAKING SODA, 1/2 TSP GROUND CINNAMON, 1/2 TSP GROUND CLOVES. Beat until combined. Beat in 1 EGG, 1/2 CUP MOLASSES, 1 TBSP VINEGAR until combined. Bear in as much of the 2-1/2 CUP FLOUR with the mixer, mixing in the remainder by hand. |
Divide dough in half. Cover and chill about 3-hours until dough is easy to handle.
Preheat oven to 375•.
Roll out dough onto lightly floured surface to 1/8-inch thickness. Cut with desired shapes.
Bake for 5 to 6 minutes until edges are lightly browned.
