    5 3/4 to 6 1/4 Cups  flour
    1 package  active dry yeast
    2 1/4 Cups  milk or butter milk
    2 Tbsp.  Sugar
    1 Tblsp  butter
      margarine, alternative
      shortening, alternative
    1 1/2 tsp.  Salt

In a large mixing bowl combine 2 1/2 cups of the flour and the yeast; set aside. In a medium saucean heat and stir milk, sugar, butter,and salt until warm and the butter almost melts. Add milk mixture to the flour mixture. Beat with an electric mixer an low to medium speed for 30 seconds, scraping sides of bowl constantly. Beat on high for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.

Turn dough out on floured board and knead, let rest until double in size. Punch dough down and divide in half. Let rest 10 minutes.

Shape doughinto loafs and lest rest another 30 - 40 minutes. Bake at 375 about 40 minutes.
