Tomato and squid pasta
Nb persons: 4
5 tablespoon | olive oil |
1 clove | garlic, peeled and crushed |
1 small | fresh red chili pepper, seeded, chopped |
2 pounds | tomatoes, ripe, peeled, seeded, crushed |
1 pound | squid, cleaned, sliced |
salt | |
freshly ground pepper | |
2 tbsp | fresh coriander, chopped |
Serve with: | |
1 1/2 pounds | spaghetti |
Heat the oil in a frying pan, sautŽ the garlic and chilli pepper 30 seconds. Add the tomatoes and simmer 5 minutes. Add the squid and cook another 2 minutes. Season to taste, add the coriander. Mix with warm pasta.
