    1/2 cup  butter
4 egg yols at room temp
    1 tb  Lemon juice
1 dozen eggs
    12 slices  Canadian bacon
    1/2 lb  spinach leaves
    12 slices  tomato
Hollandaise Melt butter in microwave. Put yolks and lemon juice in blender. Turn on and slowly pour in warm butter. Set aside. Poach eggs. On each plate place 2 slices Canadian bacon. 4 to 5 spinach leaves, one tomato slice. Top with poached egg and hollandaise.
