Pecan crusted pork with orange maple glaze

1 pork tenderloin 1 1/2 lb. | |
1/2 tsp. | salt |
1/4 tsp. | pepper |
4 T | pure maple syrup |
1 cup | chopped pecans |
2 T | oil |
Juice of 1 | orange |
1/4 tsp. | ground cumin |
1/4 tsp. | Cayenne pepper |
Cut pork into 1/2 inch slices. Flatten slices with palm of hand. Season with salt and pepper. Place 3 T syrup in dish. Place pecans in second dish. Heat oil in skillet. Coat pork in syrup then press in pecans. Place in skillet in single layer and top with remaining pecans and syrup from dish. Cook 3 to 4 minutes on each side. Remove from skillet. Stir orange juice, remaining 1T syrup, cumin and cayenne into skillet. Cook uncovered 1-2 minutes until slightly thickened. Pour over pork and serve. Serves 4
