Trudy’s Chile Con Carne

1 Tbs. | Oil |
1 Medium | onion, chopped |
1 lb. | Ground beef |
1 Large can | diced tomatoes., (28oz.) |
2 cans (16oz. Ea.) | Kidney beans |
1 1/2 tsp. | Chili powder |
3/4 tsp. | Salt |
1/2 tsp. | Ground cumin |
1 tsp. | Oregano leaves |
Heat oil over med- high heat.
Add onion and cook until soft.
Add beef and cook, stirring until meat is browned and crumbly.
Spoon off and discard any excess fat. Stir in tomatoes and their liquid, salt, chili powder, oregano and cumin. Add Kidney beans and their liquid. Simmer uncovered, stirring occasionally for 30 min.
Makes 4 servings
