    2 1/4 c.  flour
    1/4 c.  sugar
    2 1/2 tsp.  baking powder
    3/4 tsp.  ground ginger
    1/4 tsp.  salt
    1/2 c.  butter
    1/4 c.  honey
    1/2 c. + 1 Tb.  `heavy whipping cream
      sparkling sugar

Preheat oven to 350 degrees. Lightly grease a baking sheet. In a large bowl, combine flour, sugar, baking powder, ginger, and salt. Using a pastry blender, cut in butter until mixture is crumbly. In a smalll bowl, combine honey and 1/3 c. cream. Add to dry ingredients, stirring just until moistened. On a lightly floured surface, roll dough to 1/2" thickness. Using a 3" cutter, cut scones and place on baking sheet; brush evenly with remaining 1 Tb. cream, and sprinkle with sparkling sugar. Bake for 18-20 minutes, or until lightly browned.
