Spiced Candied Walnuts

1 cup | conf sugar |
1/2 tsp | cayenne pepper |
1/2 tsp | ground cinnamon |

4 cups | walnut halves |
Heat 1 in oil in skillet to 350. Bring large pot of water to boil. Blanch walnuts for 30 sec. Drain and transfer to med bowl. Add sugar, toss to coat nuts. Stir til all sugar has melted. Stir again before frying. Using a large slotted spoon transfer a few nuts at a time into oil fry til med brown about 45 secs. Do not overcook. Scatter on baking sheet to cool slightly. Mix together spices and sprinkle evenly on nuts.
