Cheese Stuffed Portabella Mushrooms

2 | Portabella mushrooms |
2 tablespoons | olive oil |
1/2 tablespoon | minced garlic |
1 tablespoon | Lime |
lemon juice, alternative | |
1/3 cup | breadcrumbs |
1/2 cup | grated mozzarella |
1/2 cup | fresh grated parmesan |
Salt | |
pepper to taste |
1. Preheat oven to 350
2. Remove stems and gills from mushrooms. Chop finely and set aside.
3. Place mushrooms on top of nonstick foil on baking sheet.
4. Sauté olive oil, garlic, stems and gills.
5. Reduce heat and add bread crumbs and lime/lemon juice.
6. Remove from hear and add mozzarella and Parmesan to mixture.
7. Spoon mixture into caps.
8. Drizzle with olive oil and top with more mozzarella and Parmesan cheese.
9. Bake in oven for 20-25 mins until mushrooms are tender and cheese is golden brown.
