Rice Salad

Rice Salad | |
1 cup | white rice, cooked according to package directions |
6 T. | olive oil |
3 T. | rice wine vinegar |
1 tsp. | salt |
1 tsp. | black pepper |
½ tsp. | tarragon |
¼ cup | chopped green or red pepper |
¼ cup | chopped parsley |
¼ cup | chopped chives |
½ cup | chopped cucumber |
¼ cup | green onion |
½ cup | chopped carrot |
½ cup | chopped radish |
Mix oil, vinegar, salt and pepper. Stir into rice and let cool. Mix in other ingredients. Chill.
