    1/2  pineapple, peeled, cored and cut in 1/2 inch slices
    1/2 c.  chopped red onion
    1/2 c.  chopped red bell pepper
    1/4 c.  chopped cilantro
    1 tsp.  lime juice

1. Coat grill rack with cooking spray. Heat grill.

2. Lightly coat the pineapple slices with cooking spray and place on the hot grill. Cook 4-5 minutes on each side, or until fruit is nicely marked and tender. Transfer to a plate. Let cool.

3. Combine the onion, bell pepper, cilantro and lime juice in a bowl. Cut the cooled pineapple into 1/3 inch pieces and toss with the other ingredients. Add salt and pepper to taste.
