Raspberry & White Chocolate Traybake

Ingredients: | |
375g | pack ready-rolled shortcrust pastry |
500g | mascarpone |
100g | golden sugar |
100g | ground almonds, (or cashews) |
2 large | eggs |
250 g | fresh raspberries |
100g | white chocolate, (chopped) |
Instructions:
1. Preheat to 320F
2. Roll out pastry on floured surface & use it to line a tin
3. Cover with parchment and weigh down, cook for 10 mins
4. Remove parchment and weights, cook for another 5 mins
5. Whisk mascarpone, sugar, nuts & eggs until well blended
6. Fold in raspberries and chocolate
7. Pour into tin & baked until lightly golden (30-50 mins)
