    200g  dark chocolate, chopped
    250g  unsalted butter, chopped 1cup (230g) firmly packed soft brown sugar
    1 teaspoon  vanilla essence
    1 1/4 cup (155g )  self-raising flour
    1/2 cup (45g)  desiccated coconut drained

1 preheat the oven to warm 160 C
Grease a 23cm round cake tin and line
The base with baking paper . Place the chocolate,butter, sugar and vanilla
In a heatproof bowl and melt,stirring occasionally ,over a saucepan of simmering water until the chocolate has melted - ensure the base of the bowl
Doesn't touch the water .sit the bowl in sink of cold water to cool .
2 combine the flour and coconut in a food processor.Add the chocolate mixture and eggs and process in short bursts until just combined. Add the cherries and process in one longish bursts to just chop
3 pour the mixture into the tin and bake for 1hour 10 minutes or until a skewer
Comes out clean when inserted into the center of the cake .leave in the tin for 15 minutes before carefully turning out onto a wire rack to cool ,if desire ,dust with icing sugar and decorate with fresh cherries .
