Grilled Asparagus with Peanut Sauce

1 Tb. | smooth peanut butter |
1 Tb. | Asian sesame oil |
1 Tb. | water |
1 1/2 tsp. | soy sauce |
1 1/2 tsp. | rice vinegar |
1 medium | garlic clove, minced |
1 1/2 tsp. | minced fresh ginger |
table salt and ground black pepper | |
1 1/2 lbs. | asparagus, tough ends snapped off |
1 Tb. | minced fresh cilantro leaves |
Whisk peanut butter, oil, water, soy sauce, vinegar, garlic, ginger, and salt and pepper to taste together in small bowl.
Meanwhile, toss asparagus with half of peanut sauce in a medium bowl, or on rimmed baking sheet. Grill asparagus, turning once, until tender and streaked with grill marks, 5-7 minutes. Whisk cilantro into remaining dressing; set aside. Toss grilled asparagus with remaining dressing. Transfer to platter, adjust seasonings, and serve hot, warm or at room temperature.
