1/2 cup | sugar |
1/2 cup | honey |
10 oz | flour |
1/8 tsp | salt |
1 tsp | bread soda |
1.5 tsp | cloves |
3/4 tsp | allspice |
1/2 tsp | nutmeg |
1 tbsp | cinnamon |
1 cup | chopped almonds |
8 oz | mixed peel |
Rind of 1 | lemon, grated |
1/2 cup | orange juice |
Sift flour, spices, salt and soda. Set aside.
Bring honey and sugar to a boil in a large saucepan.
Stir in candied fruit.
Remove from heat and add rind, flour mixture and chopped almonds.
Add orange juice gradually until dough is moist but not wet.
Use cookie pan, 17"x15", or two smaller. Line with greaseproof and grease well. Roll out to about 1/2 inch or a bit less. (Use flour on rolling pin to keep from sticking)
Bake 18 minutes @ 170C. About 5 minutes before end, boil 1 cup sugar with 1/2 cup water to thread stage (10 minutes).
Take leckerli from oven, turn out on bench and IMMEDIATELY brush sugar glaze on top. Cut at once into 1 inch pieces with bench scraper.
