Spice Poundcake

13 oz | flour |
1/2 tsp | baking powder |
1/2 tsp | bread soda |
1/4 tsp | salt |
2 tsp | cinnamon |
1 tsp | cloves |
8 oz | butter |
2 cups | caster sugar |
4 | eggs |
1 tsp | vanilla |
1 cup | milk, soured with 1 tbsp cider vinegar |
1.5 cups | raisins |
Sift dry ingredients and set aside.
Cream well butter and sugar.
Add eggs and cream again.
Add 1/3 dry ingredients, then half the soured milk. Another third dry and then rest of milk. Finally rest of dry.
Add raisins, stirring to mix.
Pans can either be loaf type or one large angel food tin. Grease well and coat with flour.
Turn into prepared pan (pans) and bake @ 180C for 50-60 minutes.
