Smashed Potato Gratin

3 lbs | Yukon gold potatoes |
3 | garlic cloves |
Kosher salt | |
1 cup | milk |
1 cup | sour cream |
2 cups | grated cheddar |
3/4 cup | Panko bread crumbs |
1/2 cup | grated parmigiano-reggiano |
Pinch | cayenne pepper |
1 bunch | chives |
Cut the potatoes into Qtrs and place in Lg saucepan w/garlic. Fill w/water and season generously w/salt. Water should taste salty. Bring to a boil and over med heat cook until potatoes are fork tender.
Preheat oven to 350 degrees
Drain potatoes and garlic in pan. Add milk and sour cream to pan. Mash w/potato masher and gently stir in cheddar with a spoon. Transfer to baking dish. Combine Panko, grated Parmesan and cayenne in Sm bowl then sprinkle it over potatoes. Bake until hot all the way through and crispy brown on top. About 20 mins.
Garnish w/chives if desired.
