Cheesy Popovers

2 | eggs |
1 cup | whole milk |
1 cup | all purpose flour |
1tsp | salt |
1/4 cup | finely grated parmesan |
1/4 cup | finely grated cheddar |
2 tbs | minced chives |
1 tap cayenne pepper | |
24 mini | muffin tin |
Preheat oven 425 degrees
In med bowl whisk together eggs, milk, melted butter. Whisk in flour and salt and fold in cheeses and chives till evenly incorporated. Cover and refrigerate 30 mins.
Put mini muffin tin on middle rack in oven to warm for 10 mins.
Remove tin from oven and pour batter into cups of the hot tin filling almost to the top. Lightly sprinkle with cayenne. Bake until crisp and golden 18-20 mins. Remove and serve hot
