Cider Brined Fried Chicken

    2cups  apple cider
    1/2 cup  salt
1(4 1/2-5pm) chicken, cut onto 10 pieces
      Water
    2  eggs
    2 tbs  cayenne pepper
    1tsp  freshly ground black pepper
    1cup  all purpose flour
    1/4 cup  corn starch
    2qts  veggie shortening for frying

In Lg bowl whisk together cider and salt until dissolves. Add chicken pieces and water, enough to coat and soak for 1 hr in refrigerator.

In Lg pot heat shortening until deep fry thermometer reaches 325 degrees. Line a sheet tray w/foil and wire rack.

In Lg bowl, whisk together eggs, cayenne, and black pepper in plastic bag, shake together flour and cornstarch. Drain chicken from brine and dip in batches first in egg mix then in flour to coat. Set on wire rack to let coating sit for 10 mins. In 2 batches, fry chicken until golden brown on both sides and cooked through, 15-20 mins, depending on the size of the piece.
