Sweet Corn Cake

1/2 cup | butter, softened |
1/3 cup | masa harina |
1/4 cup | water |
1 1/2 cups | frozen corn, thawed |
1/4 cup | cornmeal |
1/3 cup | sugar |
2 Tbs | heavy cream |
1/4 tsp | salt |
1/2 tsp | baking powder |
Preheat oven to 350 degrees
Blend butter in med bowl w/mixer until creamy. Add masa harina and water and beat until well combined.
Put defrosted corn into food processor/blender w/short pulses to coarsely chop corn. (low speed) you want to leave several whole pieces of corn.
Stir corn into butter and masa harina mixture. Add cornmeal to mix and combine.
In other med bowl, mix sugar, cream, salt, and baking powder. When well blended (thick and creamy) pour the mixture into the other bowl and stir everything BY HAND!!!!
Pour corn batter into ungreased 8x8 pan and cover w/aluminum foil. Place in 9x13 baking dish filled 1/3 of the way up with hot water. Bake 50-60 min or until cooked through.
When done remove small pan from the larger one and let sit for 10 min. And serve.
