Western potato Fritata

Ingredient
    1 bag  frozen shredded hash brown potatoes
    1 stick  salted butter
    1  Green Pepper
    1  Red Pepper
    1  Yellow Pepper
    1  Scallion
    1 large  White Onion
    3-4  Scallions
    1 pkg  favorite Bacon
    1 cup (or more)  Sharp Cheddar Cheese, shredded
    1/4 cup  whole milk,, (cream)
    4 large  whole Eggs
Salt Pepper to taste Optional hot sauce Tools
      Whisk

8" Pie pan

Instructions
Crust
1. Pre-heat oven to 375 degrees
2. Prepare Pie Pan by coating the inside of pan with butter.
3. Melt remaining butter without scorching or burning.
4. Layer in the shredded potatoes hash brown to form your crust.
5. Generously pour the remaining melted butter over the hash brown crust.
6. Season with salt and pepper.
7. Bake in oven until golden brown (15-20 minutes), then let cool

Filling
1. Cook bacon until crispy brown. Let cool then crumble.
2. Dice all vegetables
3. Combine above ingredients and set aside

NOTE: the Filling and Crust may be completed the night before. Just seal/wrap Crust with plastic wrap and place filling in an air tight container or bag.

Western Quiche!
1. Pre-heat oven to 375 degrees.
2. Take hash brown Crust in the pan and generously add Filling.
3. Whisk eggs and milk (cream) until well blended. Season mixture with salt and pepper to taste. Optional, add to egg mixture your favorite hot sauce to taste.
4. Carefully pour egg mixture, evenly distributing the egg mixture over the filling and allow it to incorporate with filling without spilling out of the pie dish.
5. Bake for 20-25 minutes or until done (clean toothpick test).

Best served hot but just as enjoyable cold. Multiple variations include adding a diced JalapeƱo pepper, Zucchini, Mushroom or Tomatoes to filling.
