Black Bean Burgers

2 | Eggs |
1 tsp. | Cumin |
1/8 tsp. | Cayenne Pepper |
1 | Red Pepper, seeded & chopped fine |
1/4 cup | Cilantro, chopped |
1 | Shallot, minced |
2 Slices | Bread, torn into large pieces |
2 cans | Black Beans, rinsed & drained |
2 Tbsp. | Olive Oil |
Heat oven to 350*. Process bread in Food Processor to course crumbs. Spread crumbs on cookie sheet & stir occasionally until golden brown & dry, 10-12 min. Set aside to cool.
Whisk Eggs, 1 Tbsp. Oil, Cumin, Salt & Cayanne Pepper together in a bowl.
Mash 2 1/2 cups beans in bowl with Potato Masher until mostly smooth.
Stir in bread crumbs, egg mixture, remaining beans, red pepper,cilantro & shallots until well mixed. Form burgers into 6 - 1 inch thick patties.
Heat additional 1Tbsp. oil in large non-stick skillet over medium heat shimmering. Cook half the patties until well browned 4-5 minutes per side.
