Banana Fritters

Six | bananas |
Two Tbls | veg or olive oil |
3/4 cup | flour |
2 | eggs |
Warm syrup or honey to cover
Mix six slightly over ripe bananas
Add to mixing bowl
Start heating oil at a low heat in a pan
In a separate bowl, crack and add contents of two eggs, add in to banana mixture.
Add 3/4 of a cup of flour.
Completely combine mixture.
Turn up heat of olive/veg oil.
when pan and oil is hot, use a spoon and add one spoon lumps of fritter mixture. Add as many fritter lumps as can fit in your pan with some space in between.
Allow fritters to cook. Turn one fritter to see that the bottom is slightly browned. Turn it back over and turn up heat slightly. Keep an eye on the pan until the fritters are nicely browned on the bottom, then turn. Fritters are done when the center is slightly cooked. Do not overcook. Do not over fill pan, cook in batches. Drizzle with warmed honey or syrup.
