Aunt Bessie's Fried Chicken

3 lbs. (approx.) | chicken pieces, rinsed and dried with paper towels |
1 | egg |
1 cup | milk |
2 cups | Flour, (approx.) |
2-3 Tblsp. | pepper |
1 Tblsp. | salt |
Directions:
Beat egg and milk together in a shallow bowl. Put the flour and pepper into a paper or plastic bag and mix together.
Combine the lard and shortening in a large skillet and melt over low heat. The melted fat should be about 1 inch deep. Adjust if necessary.
Dip each piece of chicken in the egg mixture, then put chicken in the flour mixture to coat. Shake well.
Raise the heat on the skillet; when hot place the chicken pieces in the hot fat. Leave room around each piece of chicken. Fry chicken over medium to low heat for about 6 or 7 minutes on each side, or until brown. Then partially cover the pan and cook for about 15 more minutes, turning the chicken frequently.
Remove the chicken when done, and drain the fat on a stack of paper towels.
