White Chicken Chili

1/2 C | butter, melted |
1/4 C | flour |
3/4 C | chicken broth |
2 C | half and half |
Sautee 1/2 chopped onion. In a pan mix as for white sauce, stirring flour into butter and adding broth and milk. Simmer and whisk until thickened. Add 1/2 tsp chili powder | |
1 tsp | cumin |
1/2 tsp | salt |
1/2 tsp | pepper |
2 small cans | chopped green chilis |
3 cans | white northern beans, (Bush's) |
1/2 C sauteed onion | |
11/2 C | (or more) grated Monterey Jack cheese |
Simmer together. Serve with "Scoops" or Fritos
