Tosh's Roast Turkey

Baste Turkey with canola oil and poultry seasoning.
Carefully seperate skin from meat (stick your hand inside skin and carefully separate)
Put Sage seasoning between skin and meat- fresh is best, but dried sage is okay
Use a 'V-rack' for roasting--for a small turkey, start with it baking breast side down (more juices will moisten the meat)
To check doneness, insert meat thermometer into thigh, not breast--should be no more than 175 degrees.
Let turkey sit for 20-30 minutes before carving.
