Summer Squash Casserole

6 c. | sliced summer squash, (optional, part zucchini) |
1/4 C. | chopped onion |
1 c. | shredded carrots |
1 can | cream of chicken soup |
1 C. | sour cream |
1/2 C | melted butter |
1 8 oz. Stovetop Stuffing mix
Cook squash and onion 3 min. Add carrots and cook 3 min. Drain well. Mix soup and sour cream, add to squash mixture. Combine butter with stuffing mix. Put 1/2 in bottom of casserole, add squash and soup mixture. Put remainder of stuffing on top. Bake till hot. 8 servings
