Spinach Salad

| 1 head | Red leaf lettuce |
| 1 small | red onions, sliced |
| 3/4 C. | grated swiss cheese |
| bacon, mushrooms,, (fresh, sliced) | |
| cottage cheese, (opt) | |
| Dressing: | |
| 3/4 Tbl | poppyseeds |
| 1/3 C | vinegar |
| 3/4 C | oil |
| 1/3 C | sugar |
| 3/4 Tbl | grated onion, or green onion |
| 3/4 Tbl | salt |
| 1/3 tsp | prepared mustard |
Marinate red onion and mushrooms for at least 3 hours (up to 3 days) in dressing Toss everything together before serving.
