    1lb  short grain rice
    21/2 cups  water 5Tbsp. Rice vinegar
    1Tbsp  mirin
    3Tbsp  sugar
    2Tbsp  salt

Wash rice until it runs clear
Cook rice simmer 5 min
Simmer15 min.
Take off lid and cover with teatowel
Combine vinegar etc. And heat gently till sugar dissolves. Stir constantly. Cool. Spread rice evenly over wooden bowl bottom and gently separate grains. Slowly add vinegar mix. Cool to room temp.
